I feel like a bit of an idiot asking this, as I'm sure there is a really simple answer (or there ought to be), but where is the code for the flying part, and its development logs, some mention the tools used to write it and load it and all that kind of thing (descriptions of the protocol or anything to do with the firmware of the flying bit) actually get stored/displayed? I have searched and searched and I cannot find any real mention of the software actually flying. My bad if this has been asked/answered already... Just really at a loss....

Not sure what you mean, but here is their wiki http://paparazzi.enac.fr/wiki/Main_Page Its also under the other autopilots tab above.
I meant the code which runs on the various micro controllers which are actually on board the airframes...I've looked on their wiki for quite a while...
Ah, git repositories, the secret to open source...neatly hiding in plain sight... sorted!
